Beef Stew Meat Instant Pot Chili
If you are looking for an easy Instant Pot chili that's hearty and delicious, you're in the right place!
This beefy chili recipe is a modified version of the stew meat chili my stepdad used to make when I was growing up.
Instead of ground beef, this chili features large, hearty chunks of organic stew meat from Wild Harvest.
It's meaty and satisfying and perfect for a cold winter day or for serving at your big game party when you get together with your friends to watch the Super Bowl.
While you could definitely make this recipe in a slow cooker, I love how the Instant Pot lets you get both the "all day simmered" flavor AND help break down the fibers of the stew meat all at once.
This recipe is easy to make and lets you practice using your Instant Pot's sauté function if you haven't used it yet!
Using the sauté function for this Instant Pot chili recipe not only reduces how long it will take for your pot to come up to pressure but you will get some really nice browning on the stew meat chunks.
How to make chili in the Instant Pot
Beside starting with quality ingredients, the secret to the best Instant Pot chili is the combination of both the sauté function and the manual high pressure.
The sauté feature lets you get beautiful browning on the outside of the stew meat. It also starts the process of cooking the chili so the pot doesn't take as long to come up to pressure as it would if you started with a cold pot.
Please note that this recipe was made in a 6 quart Instant Pot. To make this recipe as-written, your Instant Pot should hold 6 or more quarts.

As much as possible I try to choose organic ingredients for my recipes - especially when choosing meat, dairy or a traditionally high pesticide crop like beans.

How to make chili in the Instant Pot with beef stew meat
This Instant Pot chili recipe features organic grass fed stew meat from Wild Harvest® along with their organic beans and organic diced tomatoes.
- 2 lbs Wild Harvest® Grass Fed Organic Beef for Stew
- Salt and pepper to taste
- 1 Tbsp avocado oil (or other high heat oil)
- 1/2 cup red wine
- 1 Wild Harvest medium red onion, diced (reserve some for garnish)
- 2 Tbsp diced or crushed garlic
- 1 jalapeño, seeded and diced (add more or less depending on desired level of heat)
- 1 green pepper, seeded and chopped
- 2 Tbsp taco seasoning
- 1 Tbsp chili powder
- 3 cans Wild Harvest Organic Petite Diced Tomatoes
- 1 can Wild Harvest Organic Black Beans (or 2 cups home cooked beans made from dry Wild Harvest Organic Black Beans)
- 1 can Wild Harvest Organic Dark Red Kidney Beans (or 2 cups home cooked beans made from dry Wild Harvest Organic Light Red Kidney Beans)
- Wild Harvest Organic Shredded Mexican Cheese Blend
- Sour cream and diced onions for garnish, to taste

Directions
Best Instant Pot Chili Step 1
Cut beef stew meat into bite size chunks (most of the chunks will be fine as-is. Some will need to be cut up to be a smaller size).
Generously season with salt and pepper.
Best Instant Pot Chili Step 2
Remove lid from Instant Pot and set it to sauté mode.
Wait one minute for it to begin heating and then add avocado oil and use to coat bottom.
Add half the seasoned stew meat to bottom of the Instant Pot, cooking for 3-4 minutes on each side before turning with tongs.
Remove cooked stew meat from Instant Pot to a plate. Cook the remaining seasoned stew meat as before. Remove meat to plate when done.
Best Instant Pot Chili STEP 3
The inside of the pot will be covered in small meat chunks and seasoning called frond.
Add wine to the pot and use the edge of a wooden spoon to scrape up pieces of cooked-on grease or meat as wine bubbles (this process is also known as "deglazing").
Once meat remnants are loosened, add onion, garlic, jalapeño, green pepper, taco seasoning and chili powder. Stir to cook about five minutes or until very fragrant.
Best Instant Pot Chili STEP 4
Add Wild Harvest tomatoes (including all liquid in the can).
Add Wild Harvest beans. (note: I like to pour the top layer of liquid off the beans before adding them but I do not fully drain them)
Return cooked meat to the pot. Stir to combine.
Return cover to pot, check to be sure the vent is closed and set to manual, high pressure for 30 minutes.
When the 30 minutes is done, allow the pressure to release naturally before opening the pot to serve.
Serve with Wild Harvest garnishes
Serve hot, topped with Wild Harvest shredded cheese, sour cream and diced green onions as desired.
Adapt
Recipe can be adapted to cook in a slow cooker by searing the meat in a skillet on a stove top and then combining all ingredients in a slow cooker and cooking on low for 6-8 hours.

instructions:

- Add tomatoes including liquid.
- Remove top layer of liquid from beans if canned. Add to pot.
- Add cooked meat to pot and stir.
- Add lid to pot with vent closed. Set to manual, high pressure for 30 minutes.
- Serve hot topped with cheese, sour cream and green onions as desired.
